Ingredients for Taco Boats
- Fresh Zucchini -2
- 1 lb lean ground beef or lean ground turkey
- Homemade taco seasoning
- 1/2 cup Mexican cheese blend
- Fresh tomatoes for salsa, or use store-bought salsa
- Tortilla chips
The first step is to pre-heat the air fryer to 350 degrees.
Rinse the zucchinis well and pat them dry with a paper towel.
Cut the zucchini in half length-wise and hollow each half out.
You can add a bit of olive oil to the zucchini halves if you like. Set aside.
In a large skillet, cook taco meat (ground beef or ground turkey) on medium heat until no longer pink.
Drain any grease.
Add your taco seasoning mix and 3/4 c water. Cook on medium-high heat about 15-20 minutes.
Fill each zucchini with your cooked taco meat. Add black pepper or chili powder for a bit of heat.
Top with cheese and any other taco filling that you like.
Air fry for about 10-15 minutes.
Top with your favorite taco toppings. Sour cream is a personal favorite.
