Make A Tasty Low Carb Cheesy Sheet Pan Asparagus

This low carb cheesy sheet pan asparagus recipe is ready in just 20 minutes. It’s a perfect side dish for busy weeknight meal prep and it’s gluten free.

My daughter and I have been trying to cut back on carbs. We both feel so much better when we reduce the carb and sugar intake. Unfortunately, we have not been as strict as we would like. The struggle is real! 🙂

 

I find the only way we are successful is with meal prep. I normally plan and prepare as much food as possible on Sunday, so we can just cook our dinner each night.

We tend to stay more committed when we have the food ready to prepare. Let’s face it, who wants to spend an hour cooking dinner after working all day? 

The great thing about this low carb cheesy asparagus is it takes only 20 minutes start to finish to make so it’s easy enough for busy weeknights.

Here’s what you need to make this super simple recipe.

INGREDIENTS FOR LOW CARB CHEESY ASPARAGUS:

  • 1 lb fresh asparagus, ends snapped off
  • 1/4 melted butter
  • 1 tbs minced garlic
  • 1 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese

HOW TO MAKE LOW CARB CHEESY ASPARAGUS

1. Lay asparagus out on the sheetpan.

2. Pour garlic into the butter and mix well.

3. Spread butter/garlic mixture over the asparagus.

4. Sprinkle with mozzarella & Parmesan cheese.

5. Bake for 15 minutes at 425 degrees.

This recipe is the perfect side dish to go with steak and chicken. If I’m really pressed for time, I’ll pick up a rotisserie chicken on the way home and just whip up a pan of this asparagus to go with it.

An easy salad and you have a great, healthy dinner that even the busiest mom can make in no time.

That looks and sounds so yummilicious Michelle. I can eat asparagus all day every day. The hubby won't even look at it. But hey if it only takes a few minutes to make this, I can sneak my asparagus snack any time I want ;-)
