Growing up, nothing beat the excitement of hearing the ice cream truck making its way to our neighborhood.

We’d race outside with change in hand, always ordering a bomb pop popsicle—its bright red, white, and blue layers the ultimate summer treat.

When I spotted these nostalgic popsicles at the grocery store recently, I grabbed a box and was inspired to make a bomb pop cocktail adding the popsicle as a drink stirrer!

I’m sharing this cocktail for the kick-off of #SummerCocktailWeek with a group of my blogging friends.
