With Easter and Mother’s Day right around the corner, there will hopefully be lots of brunches to attend or host.
When you think of brunch, what is the first thing that comes to mind?
For me, it’s mimosas, lol.
Hopefully, I’m not the only one who thinks of that!
Of course, having yummy food is a must, but it’s always nice to have a signature cocktail to serve.
As several of my family members are cutting back on carbs, including myself, I decided to make a low carb mimosa to serve for brunch.
This recipe is a keto-friendly mimosa that works on a keto diet. It’s a win-win!
I’ve talked before about how important it is for me to be able to make cocktails that don’t require a lot of ingredients.
This delicious low carb mimosa is the perfect drink, because it only has two ingredients. You can’t beat that!
Low Carb Mimosa
Get your favorite champagne glass ready so you can enjoy this keto cocktail
Ingredients for a Sugar Free Mimosa
- 4 oz Diet V-8 Splash (whatever flavor you like)
- 2.5 oz Cupcake Prosecco (or other dry champagne like extra brut)
- Orange Slices
Here are some alternate ingredients for your keto cocktail.
- Grapefruit Juice or Fresh Orange Juice (be sure to check to net carbs)
- Sparkling Wine can be used for traditional mimosas
How to Make a Mimosa Easy Cocktail Recipe
- Pour Diet V-8 splash into tall flute glasses
- Top off with cold prosecco
- Add an orange slice
1 serving has 2.1 carbs and 55 calories (5 calories from Diet V-8). Cheers!
Set Up A Mimosa Bar
A great idea for a brunch is to set up a Mimosa Bar.
Add different flavors of juices, plus choices of fruit and let the guests make their own classic mimosa, or use low carb drinks to keep it keto-friendly.
I absolutely love this image from Simply Beverages that I found on Pinterest here.
Simply also makes a light line of beverages, but it is still fairly high in carbs at about 12 carbs per glass.
You could easily swap this out for the V8 Diet line, which does come in several flavors.
Each glass has 5 calories and less than 1 carb.

Best Low Carb Prosecco For Your Mimosa
- LaMarca Prosecco – with 80 calories and 1.2 carbs in a 4 oz serving, this is a great option.
- Mionetto Brut Prosecco, 750 ml – a little higher in calories and carbs with about 100 calories and 4 carbs
- Cupcake Vineyard Prosecco 4 ounces has 50 calories and 2.1 carbs
