Quiche Lorraine With Bacon & Cheese

Have you ever made a recipe and wondered why you never made it before?

That is absolutely how I felt after making this delicious Quiche Lorraine with my favorite bacon and rich gruyere cheese.

Like so many of you, I’m trying to use up what I have in my refrigerator.

I had a bunch of farm fresh eggs from my Dad, and after eating omelettes for the past few days, I was looking for something else.

I cheated and used a frozen pie crust because I had a couple in my freezer leftover from Easter.

The only thing I had to pick up was the gruyere cheese.

I was going to use cheddar, as I had it on hand, but I really wanted the rich intense flavor of gruyere.

Boy am I glad I went with it because it really does make this Quiche.

The great thing about this Quiche recipe is you can totally use whatever you have on hand. 

Leftover ham or sausage would also be great. The next one on my list to make is spinach and feta cheese.

We enjoyed this so much that I will be making that tomorrow.

Here is what you need to make a classic Quiche Lorraine: 

Quiche Lorraine Ingredients

  • 1 refrigerated pie crust
  • 1/2 lb bacon – chopped
  • 1 1/2 cups shredded gruyere cheese
  • 1/2 cup heavy cream
  • 3/4 cup milk
  • 5 large eggs
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/8 tsp ground nutmeg
  • 1 egg white

While I chose to use a refrigerated pie crust, you can certainly make your own if you want.

A classic Quiche Lorraine calls for onion, but we don’t like onions, so we left that out.

Can Quiche be frozen?

Yes! You can freeze a baked quiche for 2 to 3 months, and an unbaked, assembled quiche for up to 1 month. 

Can Quiche be made ahead of time?

Yes! Quiche can be baked and cooled 3 days ahead of time and stored covered in the refrigerator. 

What do you serve with Quiche?

Quiche are commonly served at brunch, but Quiche Lorraine is very hearty, so it’s typically served with a salad.

Make A Super Simple Quiche Lorraine With Bacon & Cheese

Yield: 1 Quiche
Prep Time: 15 minutes
Cook Time: 35 minutes
Total Time: 50 minutes

Use eggs, bacon and rich gruyere cheese to make this super simple, and delicious, Quiche Lorraine.

Ingredients

  • 1 refrigerated pie crust
  • 1/2 lb bacon - chopped
  • 1 1/2 cups shredded gruyere cheese
  • 3/4 cup milk
  • 1/2 cup heavy cream
  • 5 large eggs
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/8 tsp ground nutmeg
  • 1 Egg White

Instructions

  1. Preheat oven to 350 degrees F.
  2. Brush refrigerated pie crust with egg white.
  3. In a large bowl, whisk together eggs, milk, cream, salt, pepper, paprika and nutmeg.
  4. Add chopped bacon and 1 cup of cheese into prepared pie crust.
  5. Pour the egg mixture over top.
  6. Sprinkle with remaining 1/2 cup of cheese and paprika.
  7. Bake for 45-50 minutes until the center is set.
  8. Let cool for 5-10 minutes before serving.
