How to Make Mini Cakes

Preheat oven to 350°F.

Prepare the cake mix according to the box instructions. I used Pillsbury Funfetti cake mix, but you can use any flavor cake mix that you like.

There is a printable recipe card at the bottom of the post to make this recipe super easy.

Grease mini disposable cake pans with non-stick cooking spray.

Place a sandwich cookie in the bottom of each pan. Fill each pan halfway with cake batter.

Bake at 350°F for 8-10 minutes or until a toothpick inserted comes out clean. Cool completely.

Now for the fun part; decorating the mini cakes! I used a drop flower decorating tip to decorate the cooled cakes.

Simply fill a cake bag with frosting and decorate the top. You can also frost the cakes using a butter knife or flat spatula and smooth.

Top with sprinkles from the funfetti Valentine’s Day frosting.

The covers make these super easy to transport. Think about kids classroom treats, birthday parties or even a Galentine’s Day party with friends.
