Quick And Easy Tuscan Tortellini Pasta Salad

This tuscan tortellini pasta salad is not only easy to make, but it is mouthwatering with fresh herbs, garden tomatoes and a flavor filled dressing that will wow your guests!

With BBQ season in full swing, today’s post is all about food that is perfect for cook-outs, summer barbecues and fun grilling ideas.

My tuscan tortellini pasta salad is something I have been making for years, though sometimes I change up the pasta and ingredients depending on what vegetables are in season.

How To Make Tuscan Tortellini Pasta Salad

This tortellini pasta salad is extremely versatile. You can change out the ingredients based on what the guests prefer, or what is growing in your garden at that time.

While this is a very hearty pasta salad, due to the addition of thick slices of pepperoni, you could definitely make it lighter with just veggies.

Ingredients for pasta salad

  • 1 lb. tortellini
  • 1 c. sliced pepperoni or salami
  • 1 c. baby spinach
  • garden tomatoes
  • fresh basil
  • 1 c. cheese cubes
  • freshly grated parmesan

Ingredients for dressing

  • 1/2 c extra virgin olive oil 
  • 4 tbsp balsamic vinegar
  • 1/2 tbsp honey
  • kosher salt
  • freshly ground black pepper

Directions

Dressing

  • Whisk together olive oil, balsamic vinegar and honey 
  • Season with salt and pepper

Tortellini Salad

  • In a large pot of salted boiling water, cook tortellini according to package directions. Drain and transfer to large serving bowl.
  • Add pepperoni, spinach, tomatoes, cheese and dressing and toss until well combined. Garnish with Parmesan and fresh basil.

That’s all there is to it! A quick and easy, but also delicious, tuscan tortellini pasta salad that your friends and family will love!

This is something that I bring to most summer barbecues. It is one of the first dishes to disappear. That is a good sign that it is as yummy as it looks!
