Quick And Easy Rotisserie Buffalo Chicken Dip

Make this absolutely delicious cheesy rotisserie buffalo chicken dip with just a few simple ingredients.

There is a little deli in town that sells a homemade buffalo chicken dip.

It’s one of my 23 yo daughter’s absolute favorite cheesy dip recipes.

Every once in a while she’ll get a craving for it, and literally nothing else will get it off her mind. 🙂

She’s definitely like her mom!

It was a cold, raw weekend and neither one of us felt like going out, so we decided to enjoy a movie at home with some tasty appetizers.

Appetizers for dinner are some of our favorite things.

Give me potato skins, chicken wings and tortellini pasta salad and I’m a happy girl!

I went into town to pick up the buffalo chicken dip, and apparently we were not the only ones who had this great idea.

The dip was totally sold out. So what’s a mom to do?

Ask the kind deli employee for the recipe!

Thankfully, it was easy enough and something I could make fast with a rotisserie chicken.

This easy, cheesy rotisserie buffalo chicken dip will quickly become a family favorite.

Make it as hot or mild as you like, and use a rotisserie chicken to save time.  

You can also make it in the slow cooker, or on the stove top.

As we were short on time, we chose the stove top.

Here is what you need:

Ingredients for Buffalo Chicken Dip Recipe

  • Cooked Shredded Chicken- I used rotisserie Chicken, but you can also use chicken breasts.
  • Frank’s Red Hot Wings Sauce – not hot sauce
  • 8 oz Ranch Dressing or Blue Cheese Dressing
  • 16 oz Shredded Cheddar Cheese 
  • 8 oz Cream Cheese – cubed
  • Tortilla Chips 

How To Make Stove Top Pot Buffalo Chicken Dip

Step 1.

Remove the skin from the rotisserie chicken.

Pull the chicken off, shred in small pieces and place in a large sauce pan on medium heat.

I received the Rachael Ray 3 quart pan with lid for Christmas and love it.

Step 2.

Add the shredded cheddar cheese, cubed cream cheese, ranch dressing and wings sauce.

Step 3.

Mix well and cook until cheese is melted and well blended.

Step 4. 

Reduce to low, cover and continue to cook about 30 minutes.

Serving Your Buffalo Chicken Dip

Serve with tortilla chips and enjoy! 

You can also serve it with celery sticks or other veggies with blue cheese crumbles.

Of course, nothing beats a good ol’ tortilla chip.

Slow Cooker Buffalo Chicken Dip

I’ve made this many times in the crock pot and it’s even easier made that way.

Simply add the cooked shredded chicken to the crockpot. Add all the ingredients and cook covered on low about 2-3 hours.

This is one of those appetizers that is perfect all year long.

It can be brought to pot lucks, summer barbecues and is great for game days!

Quick And Easy Rotisserie Buffalo Chicken Dip

Yield: 12 servings
Prep Time: 10 minutes
Cook Time: 1 hour
Total Time: 1 hour 10 minutes

This easy, cheesy buffalo chicken dip will quickly become a family favorite. You can make it as hot or mild as you like and use a rotisserie chicken to save time.

Ingredients

  • 1 Rotisserie Chicken - shredded
  • 1 cup Red Hot Wings Buffalo Sauce
  • 1 cup Ranch Dressing
  • 2 cups Shredded Cheddar Cheese
  • 8 oz Cream Cheese - cubed
  • Tortilla Chips

Instructions

SLOW COOKER

  1. Place all ingredients in the slow cooker.
  2. Cook on high for 1 hour.
  3. Stir a few times while it's cooking.
  4. Turn to warm when ready to serve.
  5. Serve with tortilla chips.

STOVE TOP

  1. Place all ingredients in stock pot on stove top.
  2. Cook on medium heat.
  3. Continue to stir all ingredients until well blended.
  4. Cover and let simmer for 30 minutes.
  5. Serve with tortilla chips.
