I’m all about a hearty breakfast casserole, especially one made with chorizo! It takes me back to Sunday breakfast as a kid.
My dad made breakfast for us every Sunday and you can bet chorizo, eggs and homefries was frequently on the menu!
I’ve basically wrapped up all of that yummy goodness into one delicious breakfast casserole.

INGREDIENTS NEEDED FOR THIS CHORIZO BREAKFAST CASSEROLE
You will need the following ingredients listed below to make this chorizo breakfast casserole (the exact measurements, nutrition information and full recipe are all in the printable recipe card at the bottom of the post).
- Eggs
- Chorizo
- Milk
- Minced Garlic
- Mexican Style 4 Cheese Blend – you can also use your favorite cheese.
- Frozen Diced Potatoes
- Bell Pepper – diced
- Onion – chopped -my daughter doesn’t like onions, so we left that out.
- Salt and Pepper to season
- Paprika
- Fresh Parsley
- Non Stick Cooking Spray


Kitchen Tools
- 9 x 13 Baking Dish
- Measuring Cups and Spoons
- Large Skillet – my dad bought me a set of Carote pans for Christmas and I’m obsessed.
- Sharp Knife – to dice peppers and onions I’m in love with the Carote knife set to go with my pans. They have a pretty design and are under $18!
How to Make the Chorizo Breakfast Casserole
Wash and chop the peppers and onions: Start by washing and dicing the green pepper and the onion if you are using that. Set aside.

Cook the chorizo: brown the chorizo in a skillet, stirring frequently. It will take about 10 minutes to cook through. Drain well.
Saute peppers and onion if including.

Add Potatoes: Pour the bag of frozen diced potatoes in the bottom of the greased 9 x 13 cooking pan. Season with salt, pepper and paprika.

Add Chorizo: Spread the cooked chorizo mixture into the casserole dish, spreading it out evenly over the potatoes.

Beat the Eggs: Place the eggs in a large bowl and whisk with 1 cup of milk. Add garlic, salt and pepper.

Add Eggs: Pour the egg and milk mixture over the dish and mix it up so everything is covered.

Cover with cheese: cover the entire dish with shredded cheese. I used a Mexican 4 cheese blend. You can use your favorite. A Pepper Jack would be great!

Bake in a 350 degree pre-heated oven: Bake for 30 minutes until the eggs are set and cheese is browned. You will see the ends beginning to pull from the sides when it is ready.
We like our top cheese broiled a bit, so we set it under the broiler for 3-4 minutes. This is optional.
Remove from the oven and let rest for 10 minutes. It smells amazing!

Serve and enjoy! Top with fresh parsley if desired.

Look at the layers of eggs, potatoes chorizo and cheese. It’s seriously delicious! My daughter asked if I could make this every Sunday, so it feels like a full circle moment! 🙂

Chorizo Breakfast Casserole
Ingredients
- 8 Eggs
- 1 lb Ground Chorizo
- 1 cup Milk
- 1 tsp Minced Garlic
- 1 Cup of Mexican Shredded Cheese
- 1 Bag of Frozen Diced Potatoes
- 1 Bell Pepper, Chopped
- 1 Onion, Diced
- Salt and Pepper
- Paprika
- Non Stick Cooking Spray
Instructions
- Brown the chorizo in a large skillet. Drain well.
- Saute the green peppers and onion in the skillet until softened.
- Spray a 9x13 casserole dish with cooking spray.
- Pour the bag of frozen diced potatoes in the bottom of the baking dish.
- Spread the cooked chorizo mixture into the baking dish, spreading it out evenly over the potatoes.
- Place the eggs in a large bowl and whisk with 1 cup of milk.
- Season with garlic, salt and pepper.
- Pour over the chorizo.
- Top with cheese.
- Bake for 30 minutes or until the eggs are set and cheese is browned.

I've never seen Johnsonville chorizo! Definitely something I'll be looking for because I love making breakfast recipes with chorizo. And this is one I would definitely make!
